The Process
Bloom to Cherry
Coffee starts as a cherry on a tree. Inside each cherry are two seeds—what we call coffee beans.
Cherry
Picked when ripe (usually red), then processed to remove the fruit.
Unroasted
Once the fruit is stripped away and the beans are dried, you're left with green coffee. This is the stable, shippable form. It's hard, dense, and smells like grass. This is what we buy and roast.
